Biscuit & Egg Cups
Recipe by Just the Tip / Inspired by The Family Kitchen

Here’s what I used:

  • 1 tube refrigerated biscuit dough (I like the kind from Trader Joe’s)
  • 8 eggs
  • 1/2 cup Hormel real bacon bits
  • 1/2 cup 50% reduced fat shredded cheddar cheese
  • diced scallions
  • salt & pepper to taste
  • hot sauce

Here’s what I did:

  1. Preheat the oven to 400. Lightly spray a muffin tin with nonstick cooking spray.
  2. Flatten and slightly stretch each biscuit so it’s large enough to be pressed into the muffin tin.  Make sure to press the biscuit all the way up the sides of each muffin cup so that there’s room for the egg without spillage.
  3. Crack an egg into each biscuit and sprinkle with salt and pepper
  4. Sprinkle on the cheddar.
  5. Then the bacon…
  6. And scallions…(or anything else)
  7. Sprinkle on a little hot sauce, to taste, and bake for 18-20 minutes. Start checking it at the 13-15 minute mark, as I think my oven might be a bit off.  When the whites are set, you’re good.

Bacon and Egg Toast CupsIngredients:6 slices of bacon, uncooked or precooked6 slices of bread1/2 cup shredded cheddar cheese6 eggsSalt and pepperDirections:Preheat the oven to 400° F. Spray large muffin pan with cooking spray. In a frying pan, cook bacon about 3-5 minutes, until partially cooked but not completely crispy (if using precooked bacon skip this step). Transfer to a paper towel-lined plate. Cut out circles (about 3 1/2 inches) in each piece of bread using a cookie cutter or a drinking glass turned upside down.Press the bread rounds into the greased muffin wells. Curl a piece of bacon around the periphery of each piece of bread, positioning it between the bread and the muffin tin to help keep it in position. This can be a little tricky until you get the hang of it. Sprinkle a small amount of shredded cheese in the center of each piece of bread. Crack one egg over each piece of bread being careful not to break the yolks. You may not want to use all of the egg white. If you do you may need to adjust the cooking time to a little longer. Once all the bread pieces have been topped with eggs, bake until eggs are cooked through to your liking (about 15 minutes for me) and bacon is crispy. Run a knife around the edge of each muffin well and pop the egg cups out. Season with salt and pepper to taste and serve immediately.Healthier Option: Use multigrain bread and turkey bacon for a healthier twist.

Clean Eating: Coconut Chicken with Pineapple-Strawberry Salsa

For dinner yesterday, I made Coconut Chicken w/Pineapple-Strawberry Salsa from Clean Eating Magazine (recipe and photo credit)

I followed the recipe exactly, and the Pineapple-Strawberry salsa was really good but the chicken didn’t have any coconut flavour. I would make this again, but I might marinate the chicken overnight or I’ll ask my mom and my friend Jeff about how I can make it a little more flavourful!

valentines day lunch :)
it was a trade off, i made him breakfast and im going to make him dinner, but he made me lunch, and stayed home from work today yay!
proscuitto, salami, gouda cheese, baguette, and patatas bravas! (potatoes in some sort of delicious sauce)
next on the valentines day agenda: play video games, grab a tuxedo mocha (yuuummmy), drink wine, and be silly :)
